Horse gram or kollu paruppu is a healthy bean and good source of protein and iron. It has lots of health benefits such as reducing cholesterol,helps in weight reduction and remedy for cold and cough.
- Kollu or horse gram dhal – 1 cup
- Onion -1 cup (chopped)
- Tomato -1
- Cuming seeds – 1 tbsp
- Pepper – 1tbsp
- Turmeric powder – 1/4 tbsp
- Red chilli Powder-1 tbsp
- Coriander Powder – 1tbsp
- Tamarind extract – 1/4 cup
- Mustard seeds -1 tbsp
- Hing- a pinch
- Curry leaves – few
- Garlic – 4 pods
- Oil – 1tbsp
- Salt – as needed
- Clean and remove stones from horse gram. Wash it and pressure cook the horse gram with 3 cups of water for 4 whistle.
- Heat oil in a pan, add cumin seeds,pepper seeds, chopped onion, curry leaves, tomatoes,garlic and fry it for few mins in a medium flame.
- Add the cooked horse gram with cooked water,red chilli powder,coriander powder,turmeric powder,salt and 1cup of water and bring to boil for 10 mins at medium flame.Then turnoff.
- Drain the water from the kollu dal and keep aside.
- Heat oil in a another pan,add mustard seeds and hing .After it splutters,add the kollu water and tamarind water.When it starts boiling ,turn off the stove.Now kollu rasam is ready to serve.
- Leave the kollu dal to cool little bit and grind it well.(Adjust the salt level)
- Now kollu chutney is ready to serve.
- Serve the kollu chutney and kollu rasam with hot rice.
Irish soda bread recipes are amongst the most traditional of Irish recipes. However, there are hundreds of variations on the theme. The original traditional recipe came from Ulster and was a mainstay of the traditional Ulster breakfast. I don’t know how this first recipe will match up with what some people consider as a soda bread recipe, but as it’s from one of the great names in Irish cooking, Monica Sheridan, it’s certainly authentic and traditional.
Where we know the origins of the different recipes, these origins have been acknowledged.
Irish soda bread recipes are very easy to make and are also a great way of introducing children to baking.
- 2 cups Buttermilk
- 4 cups whole wheat flour (preferably stone ground)
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Mix all the dry ingredients together in a large bowl.
- Make a well in the center and add most of the buttermilk.
- Working out from the center, use your hands to make a dough.
- Add more milk if necessary.
- The dough should be soft but not too sticky.
- Turn the dough out onto a floured board and pat lightly into a round.
- Flatten slightly to about 2 inches thick and place on a baking sheet.
- Cut a deep cross and bake in a preheated 450 degrees F oven for 15-20 minutes.
- After the 15 to 20 minutes is up reduce the heat to 400 degrees F and bake for a further 20-25 minutes.
- You will know when the bread is cooked if it sounds hollow when tapped on the bottom.
If you want to make an even richer soda bread add 1 oz. fine oatmeal, 1 egg, and 1 oz. butter to the mixture.

- 1 tb Butter
- 1 ts Baking soda
- 4 c White flour
- 1 c Buttermilk or sweet milk
- 1 ts Salt
- Rub the butter into the flour. Add the salt and soda, mix all
- well together by running the dry ingredients through your fingers.
- Add the buttermilk (or sweet milk) and stir into a soft dough with a wooden spoon.
- With your floured hands, knead the dough lightly into a ball andturn out onto a lightly floured baking sheet.
- Flatten the dough into a circle 1 1/2 inches thick with the palm of your hand.
- Make a cross in the center with a floured knife.
- Bake at 425 degrees for 30 to 35 minutes.
More Irish Soda Bread
- 4 cups Stone Ground 1 1/2 ts SaltWhole wheat flour 1 1/2 ts Baking soda2 c White flour 2 c Buttermilk or sweet milkMix the whole wheat flour thoroughly with the white flour, salt, and soda.
- Make a well in the center and gradually mix in the liquid. Stir with a wooden spoon.
- You may need less, or more liquid – it depends on theabsorbent quality of the flour. The dough should be soft but managable.
- Knead the dough into a ball in the mixing bowl with your floured hands.
- Put on a lightly floured baking sheet and with the palm of your hand flatten out in a circle 1 1/2 inches thick.
- With a knife dipped in flour, make a cross through the center of the bread so that it will easily break into quarters when it is baked.
- Bake at 425 degrees for 25 minutes, reduce the heat to 350 degrees and bake a further 15 minutes.
- If the crust seems too hard, wrap the baked bread in a damp tea cloth.
- Leave the loaf standing upright until it is cool.
- The bread should not be cut until it has set – about 6 hours after it comes out of the oven.
One of the most famous Irish drink recipes there are and the most requested on cold winter evenings are for Irish coffee.
A Bit of History of the Irish Coffee
Joe Sheridan at the Foynes Airbase in 1942, created the first Irish Coffee after a flight was recalled due to winter storms. He knew most Americans preferred coffee, so Joe treated them to a trick the Irish had used for a long time to ‘warm themselves up’.
A lot of Irish will add a shot of whiskey to their tea, but with Americans preferring coffee, he added it to their coffee with some sugar and cream. Needless to say, it was a hit!
Irish Coffee Comes to America
Later, in about 1952, Irish Coffee shows up in the San Francisco’s Buena Vista Bar. It is a bit of a debate whether Joe Sheridan himself introduced it to Americans at the bar, or if Stanton Delaplane, a travel writer for the San Francisco Chronicle encouraged the bar to start serving it. Either way, we are glad it made its way across the Atlantic!
So, on to the original recipe!
Joe Sheridan’s Original Irish Coffee
Fill a footed Irish Coffee Mug 3/4 of the way with coffee. Add 3 sugar cubes or 1 1/2 tsp. granulated sugar and one shot Irish Whiskey.(All real Irish whiskey is good, but Jamesons and Bushmills is consistently on the lists of ‘best Irish Whiskey’!)
Stir to dissolve the sugar. Now top off the mug with aged cream(old cream, new cream wont float) pouring it over an upside down spoon so the cream doesn’t disturb the coffee. If you still have trouble with your cream sinking, you can try lightly whisking it until it is a bit frothy, NOT stiff(that is a new twist on Irish Coffee).
Slightly Different Recipe
For a slightly different taste, follow the above recipe replacing the granulated sugar with brown sugar.
What Some Call Irish Coffee, But It’s Not
Another recipe that some really enjoy and consider it to be amongst Irish Coffee recipes is to put an ounce or two of Baileys Irish Cream in their coffee. This isn’t Irish Coffee, even though Baileys Irish Cream is made with great Irish Whiskey and wonderful rich cream that can only be gotten in Ireland.
